Among the leading experts in the history of nutrition, Professor Montanari takes an unusual, culinarysociological approach to the hotly debated issue of cultural identities and their definitions. A dish of pasta - a metaphor of the culinary universe in which our daily life takes place - will be the starting point for this talk in which Montanari will address food as culture, as the product of our identity as well as a conduit to express it and communicate it.

Massimo Montanari (1949) is Professor of Medieval History and History of Food at Bologna University, and head of the European Masters Degree Program on the History and Culture of Food. following are some of his many books devoted to his chief interests: Campagne medievali (Einaudi, 1984); Atlante dell’alimentazione e della gastronomia (edited with F. Sabban, UTET, 2004). Also, Convivio (3 voll., 1989-1992); Il pentolino magico (1999); Il cibo come cultura (with A. Capatti, 2008); La fame e l’abbondanza. Storia dell'alimentazione in Europa (2008); Alimentazione e cultura nel Medioevo (2008); Il formaggio con le pere. La storia in un proverbio (2009); Il riposo della polpetta e altre storie intorno al cibo (2009), all published by Laterza. For the same publisher, he has edited Il mondo in cucina.
